Stuffed Pumpkin

Ivy and I concocted this last October for a dinner party. We used a large pumpkin and buffalo meat. We sliced it and served wedges. Adding an egg would have held the stuffing together a little better.

 

Ingredients

  • 1 Medium pumpkin
  • 1 pound chopped/ground meat
  • 1 onion
  • 1 bulb garlic
  • 1 apple
  • 1/2 cup walnuts
  • bread
  • 1/2 cup veggie stock
  • salt and pepper
  • olive oil

Directions

  1. cut pumpkin like jack-o-lantern, clean inside
  2. rub inside with olive oil, garlic, salt and pepper
  3. saute garlic and onions in olive oil
  4. add meat
  5. chop apples and nuts, add to cooked meat
  6. add salt and pepper
  7. add veggie stock, simmer to reduce
  8. cut bread into small pieces, lightly toast
  9. toss meat with bread. Fill pumpkin
  10. put 1/4" water in pan, place pumpkin on aluminum foil to keep it dry
  11. put lid on, bake @400 for 1 hour
