Ivy and I concocted this last October for a dinner party. We used a large pumpkin and buffalo meat. We sliced it and served wedges. Adding an egg would have held the stuffing together a little better. Ingredients- 1 Medium pumpkin
- 1 pound chopped/ground meat
- 1 onion
- 1 bulb garlic
- 1 apple
- 1/2 cup walnuts
- bread
- 1/2 cup veggie stock
- salt and pepper
- olive oil
Directions- cut pumpkin like jack-o-lantern, clean inside
- rub inside with olive oil, garlic, salt and pepper
- saute garlic and onions in olive oil
- add meat
- chop apples and nuts, add to cooked meat
- add salt and pepper
- add veggie stock, simmer to reduce
- cut bread into small pieces, lightly toast
- toss meat with bread. Fill pumpkin
- put 1/4" water in pan, place pumpkin on aluminum foil to keep it dry
- put lid on, bake @400 for 1 hour
